Things I learned this morning: one, pesto is ridiculously easy to make; two, sometimes you have to make sacrifices for good food. For example, sometimes you have to kill your whole basil plant in order to make pesto. Unfortunate, but worth it.
Because this pesto was dang good.
You might even want to double or triple the recipe, depending on how many mouths you're feeding. (It only makes enough for one college student--perfect amount for me, but maybe not for a family, or a couple, or an apartment full of roommates who share with each other.)

1 c. washed & dried basil (packed down)
1/4 c. roasted hazelnuts & almonds
1 TBS finely minced garlic
1/4 c. parmesan cheese
1 TBS fresh lemon juice
1/4 c. olive oil
pinch of salt
pinch of rosemary

Blend it, done.
